Stuffed Pepper Soup

This hearty soup is not only perfect for a winter’s day but amazingly easy to prepare.

What you will need:

  1. 1 LB ground beef
  2. 1 medium yellow onion
  3. 2 bell peppers 
  4. 1 1/2 cups white rice
  5. 3 cups beef broth
  6. ​14.5oz can tomato sauce 
  7. 14.5oz can diced tomatoes with roasted garlic 
  8. 1/2 tsp salt
  9. 1/4 tsp black pepper
  10. 1 Bay leaf
  11. 1/2 tsp oregano
  12. 1/2 tsp basil ​
 
  • While you fry up your burger dice your onion and peppers
 
  • Place cooked burger and peppers into your crock pot
 
  • Now sauté your onions till translucent, I like to add a pinch of salt and pepper, but you don't have too.
 
  • Cook the rice and add to crockpot
 
  • Add the remaining ingredients into your crockpot 


Cook on high for 3 hours or low for 6 hours

*I prefer low and slow the flavors continue marinate together the longer it cooks*



Want to add a twist try one of these modifications

Add taco seasoning to your hamburger
or/
Use 1/2 LB pork and 1/2 LB beef
or/
Add a can of corn into the mixture

Homemade Mac & Cheese

Homemade MAC and Cheese is a simple comfort food

Here is my recipie

Ingredients:

  • ​​3 cups Milk
  • 1/4 Flour
  • 1 stick butter
  • 2 tblsp butter
  • 1 package noodles
  • 12 once’s of chesse (cheddar, motzarella, American, pepper jack) your choice on type
  • salt
  • pepper​
  • 4tblsp bread crumbs


Bread Crumb Topping mix bread crumbs and 2 Tblsp melted butter together


Directions:


  1. Place water in a pot for the noodles, bring up to a boil.
  2. While waiting on water in a separate pot melt 1 stick of butter
  3. Once melted add 1/4 cup of flour stirring frequently
  4. Slowly add 3 cups milk on stirring constantly, cook on medium heat till thickned
  5. Preheat oven to 350
  6. Check your noodle water if boiling add noodles
  7. Now milk mixture should be good and thick add your cheese, stir till smooth then remove from heat.
  8. ​Drain noodles and place in a baking dish
  9. Poor cheese mixture over noodles and fold into the noodles
  10. Add salt and pepper to taste
  11. Place bread crumb topping on top
  12. Bake for 30 minutes uncovered for crispy or covered for smooth and soft
